Our Classes- Everything from sourdough to pasta

At The Kentucky Millstone, we seek to offer artisan bread making classes and culinary workshops to chefs of all skill levels. Whether you are a budding at-home baker, or a studied chef looking to expand your repertoire, we have at least one course for you. SINGLE DAY CLASSES

Biscuits and Gravy

1.5 hours of hands-on instruction, limit 8 students ($40 per person)

Have you enjoyed the Biscuits and Gravy at The Kentucky Millstone and thought, “I’d really like to be able to make this for my family?” Now you can. In this hand’s on class, we break down the processes in simple steps. Learn how to property work the dough to make flaky, delicious biscuits like grandma used to make. Using local pork, learn to make a flavorful gravy with the perfect consistency. Then, take home breakfast (for dinner)! Take home the biscuits you made in class, as well as some of the gravy we make in class and you’ll be all set to share some amazing food with your family!!


3 day Intensive Sourdough Bread Camp

3 days hand’s on instruction, limit 6 students ($750 per person)

This intensive class covers everything we make sourdough. Learn all our secrets!! We start with the classic artisan loaf, then learn how to add items to it, creating a rainbow of flavor. We move on the focaccia and learn three different shaping techniques. We also cover English muffins, bagels and ciabatta. Camp is from 9-4 Monday thru Wednesday and includes coffee, light breakfast and lunch. Only two camps per winter season and the limit of 6 students allows for intensive hands on instruction. Sweets - Brownies, Donuts and Cookies

2 hours hand’s on instruction, limit 8 students ($60 per person)

Did you know that our mixes are so versatile? Use our brownie mix to make both brownies and our famous chocolate donuts! Our cookie mix is a blank slate to make any occasion special! In this class we learn best practices in baking to make a variety of sweet treats for you to take home. Enjoy working in The Kentucky Millstone kitchen to produce the same amazing baked goods that we do! Take home the recipes, and a variety of baked goods, as well as some cookies to bake at home- to share with your family- or enjoy yourself!

SINGLE DAY CLASSES

Introduction to Sourdough Breads Class

3 hours of hands-on instruction, limit 6 students ($85 per person)

Learn the art of Sourdough by making your own bread. Although taking care of a sourdough starter is a bit like taking care of a young child, I break this skill into manageable steps and walk you through all the important points of how to feed your starter, how to mix and make sourdough bread, then how to score and bake the bread.  You will go home with your own sourdough starter, the loaf of bread that you baked and two loaves that you will bake the following day, as well as detailed instructions on everything we learned in class.


Introduction to Baking Yeasted Breads

3 hours of hand-on instruction, limit 6 students ($85 per person)

In this class, I take my grandmother's secret yeast dough recipe and break it down into steps that are simple enough for the beginner. We then learn time saving tips, like how to make our signature cinnamon rolls, dinner rolls, coffee cake and cheese crowns from the one simple recipe. We also talk about how to make the timing fit into your schedule and other ways to get creative with the dough! We'll get our hands in the dough, so you can take home a batch to play with the next day and there will also be lots to sample and some of the delicious goodies we bake to take home. This is a great introduction on how to make yeasted breads and share your love of baking with the world!


Pretzels and Beer Cheese

2 hours hand’s on instruction, ($60 per person)

In this class, learn how to make pretzels from start to finish in under an hour! We’ll share ideas on adding sourdough starter to give them a little more depth. Then we’ll crack open a beer and whip up some beer cheese to go with them! Take home there recipes, the inspiration and of course, some pretzels and beer cheese!


Introduction to Sourdough Bagels

2 hours of hands-on training, limit of 8 students ($60 per person)

Do you love bagels??? Our bagels are sourdough, with no commercial yeast. Not only is this healthier, but sooo much tastier. In this class, we walk you through taking care of your sourdough starter, then get our hands in the dough. We learn about mixing, kneading and shaping the bagels, as well as ketteling and baking the bagels. We talk about recipe development and how to create lots of different varieties of bagels from one base recipe. Take home your bagels to bake the next day, as well as some of bagels baked in class. Base recipe provided to give you a rainbow of inspiration to share with your family!


Introduction to Pasta

4 hours of hands-on training, limit 8 students ($85 per person)

Deliziosa!!! Ravioli, tortellini, fettuccini - Oh my... In this hands on class we learn to make pasta. Let's talk about flour and eggs - from there we can go to a delicious plate of pasta. We will explore making pasta by hand and then get creative with rolling the dough, to using the ravioli maker. We will also create a filling for tortellini and ravioli, as well as savor three different sauces from an easy red sauce to Alfredo and pesto. Come hungry because there will be lots to sample! This is a great class for private events, so inquire about hosting your own pasta party!!
